Farfalla Extra Brut represents the essence of the Ballabio style. After a long aging in the bottle it is a synthesis of elegance, freshness and complexity. Its balance comes from the Pinot Noir grapes, coming from proprietary vineyards with a predominantly calcareous-clayey structure set on hilly sides between 300 and 500 meters above sea level.

Grape Variety: 100% Pinot Noir
Average age of the vines: 20 years
Grape harvest: Traditional by hand in 18 kg crates
Vinification: Soft pressing of the whole grapes to obtain and ferment only 45% of the free-run must at a controlled temperature.
Aging in steel tanks until spring on its own yeasts.
Second fermentation: Assembly of the Cuvée using, together with the vintage wines, a good 20% of wines from old harvests aged in heat-conditioned stainless steel tanks to give complexity and uniqueness.
Tirage with selected yeasts in the company and bottle aging for at least 30 months.
Disgorgement and further 2 months of evolution before being put on the market.
