Duca Brut - Duca di Salaparuta
Produced with the Martinotti-Charmat method Duca Brut comes from Grecanico and Chardonnay grapes. This sparkling wine, created for the first time in 1971, is today more contemporary and modern than ever thanks to the freshness, given by the Grecanico, combined with the structure and olfactory complexity inherited from Chardonnay.
TYPE Spumante Brut CLASSIFICATION Quality Sparkling Wine HARVEST Manual and in the morning towards the end of August, slightly earlier in order to preserve the acidity. VINIFICATION Obtained from softly pressed whole grapes, using only the first fraction of free-run must, 55% which, subsequently, is fermented at a low temperature. The wine obtained is further processed in an autoclave with the long "Charmat" sparkling method. MATURATION After the second fermentation it remains for at least 6 months in an autoclave on its own yeasts. AGING At least three months in the bottle at a controlled temperature. ALCOHOL CONTENT 12.0% - 12.5% by vol. SUGAR CONTENT 9 g / lt. SERVING TEMPERATURE 6 ° - 8 ° C. SERVING SUGGESTIONS Excellent aperitif but also pleasant throughout the meal.
