Trento Doc "Zell" Brut Nature - Cantina Sociale di Trento
On the palate, Zell Brut Nature highlights the qualities of balance, minerality and structure, without reducing its finesse and elegance. The cleanliness of the palate and persistence in the tasting make it suitable for a diversified proposal, from the formal and celebratory occasion to the festive one.
The Chardonnay grapes selected for the cuvée come exclusively from vineyards, arranged in a giropoggio, in the locality of Zell, a hamlet of Trento located at 500 m. s.l.m., where historically the best grapes of Monte Calisio are destined for the sparkling base. They are managed according to the criteria of integrated pest management, without the use of insecticide products but where products not coming from chemical synthesis are preferred for defense. The grapes, rigorously harvested by hand and placed in small crates, to safeguard the integrity of the bunches, are harvested slightly in advance of full ripeness, in order to preserve their acidity and freshness. They are immediately vinified in "white", after a brief maceration on the skins at low temperature. Soft pressing and decanting followed to make the must clear. At this point our selected yeasts are added and the first fermentation is carried out in stainless steel tanks at a temperature of 15/17 ° C and partly in wooden barriques used, until spring, to obtain the base wine. The second fermentation takes place slowly. Zell remains on the lees for at least 30 months before proceeding with manual remuage and dégorgement. It rests at least 3 months before being made available for packaging.
