Trento Doc Rosè "Zell" - Cantina Sociale di Trento

The Pinot Noir grapes selected for the cuvée come exclusively from vineyards in the locality of Zell, a hamlet of Trento located 500 m above sea level, where, historically, the best grapes from Monte Calisio destined for the sparkling wine base are produced. The vineyards, arranged in a gyropoggio system, are located on a wide natural terrace facing south towards the Adige Valley, characterised by shallow, draining soils rich in marly limestone scales. The vineyard is managed according to the criteria of integrated pest management, without the use of insecticides, but where products not derived from chemical synthesis are preferred for defence. Ultimately, chemical weeding is being progressively abandoned in favour of practices that are more respectful of the environment and more efficient for the overall biodynamics of the soil. The grapes, harvested by hand in small crates, are picked slightly in advance of full ripeness in order to preserve their acidity and freshness. After a short maceration on the skins at a low temperature to extract the characteristic colour, the grapes are gently pressed and racked to clarify the must. At this point, our selected yeasts are added and the first fermentation is carried out in stainless steel at a temperature of 15/17 °C. The following spring, the new wines are tasted and selected, then prepared for the second fermentation in the bottle. Slowly the mousse takes place. Zell Rosé remains on the lees for at least 36 months before being disgorged.
