Trento Doc "Zell" - Cantina Sociale di Trento

The selected Chardonnay grapes come from vineyards in the Zell area, a hamlet of Trento located 500 m away. s.l.m., where historically the best grapes of Monte Calisio are destined for the sparkling base.

The vineyards are located on a large natural terrace, characterized by shallow, draining soils rich in marly limestone flakes.

The vineyard is managed according to the criteria of integrated pest management, without the use of insecticide products but where products not coming from chemical synthesis are preferred for defense.

Ultimately, chemical weeding is gradually being abandoned in favor of more environmentally friendly and more efficient practices for the overall soil biodynamics.

The grapes, harvested by hand in small crates, are harvested slightly in advance of full ripeness, in order to preserve their acidity and freshness

They are immediately vinified in "white", after a brief maceration on the skins at low temperature. Soft pressing and decanting followed to make the must clear.

At this point our selected yeasts are added and the first fermentation in steel takes place at a temperature of 15/17 ° C until spring.

The masses are then tasted and those selected by us, deserving of becoming Zell, are prepared for the second fermentation in the bottle.

The second fermentation takes place slowly.

Zell remains on the lees for 28 months before being blossomed and made available for packaging.
