    VARIETY: Sagrantino 100%

    SOIL: the land, located in the municipality of Bevagna, on which the vineyards stand has various morphological and composite characteristics of calcareous and clayey origin; they are located at an altitude of more than 380 m a.s.l., with a South-West exposure.

    AGE OF VINEYARDS: 25 years old and 40 years old part

    VINIFICATION: selection of the grapes, very soft pressing and destemming. Minimum addition of sulfur dioxide and subsequent fermentation with maceration of about 25 days in 30 Hl cement tanks. Frequent pumping over of the musts and délestages. Racking and filling of the Tonneaux. Malolactic fermentation carried out in wood the following spring.

    AGING: the wine was placed in 700 liter French oak Tonneaux from the Barolo and Barbaresco area, where it spent a period of aging of 30 months before being destined for the aging phase in concrete for a further 6 months, finally been bottled and left to rest in glass for another 6 months before being marketed.

    The company is small, but with big goals! We work in a total organic farming regime, in an ethical and sustainable way, giving great importance to manual work and limiting the use of machines. We only collect company grapes from 5 different plots located on the hills of Montefalco at an average height of 450 meters above sea level, all with excellent exposure to the South-West. We listen to nature, its rhythms and cycles, preserving the character of the grapes to get to the cellar and obtain a true and authentic product of our territory, with spontaneous fermentation in concrete tanks and without any temperature control or external intervention.
