DESCRIPTION Freisa is a little-known variety despite its deep and ancient link with Nebbiolo. A story that could not do anything against more productive and easier to grow varieties. Langhe DOC Freisa Kyè is the tribute to this noble grape grown in the Langa, with a strong personality.
VINEYARDS San Ponzio vineyard, Municipality of Barolo. Altitude between 390 and 410 meters above sea level, clay soil and a collection of stumps selected by Aldo Vaira in an old vine planted by his grandfather.
CULTIVATION Vajra has always believed in sustainable agriculture and the natural grassing of vineyards. Irrigation is not used and the thinning is decided based on the vintage.
HARVEST AND VINIFICATION The optimal moment of the Freisa harvest is marked by the alternation of autumn days that are still warm and cold nights: generally in the second half of October. The elimination of the stalk, the most acidic part and with the highest charge of green tannins, is an indispensable process for this variety. A rather long fermentation allows the transmigration of tannins from grapes to wine. For this rather wild variety, the second fermentation, malolactic fermentation, is equally indispensable. A span of 12-18 months depending on the vintage, partly in Slavonian oak barrels and partly in barriques, gives the wine an indispensable balance.
