Color: intense ruby red with important violet reflections in youth, tending to garnet after a few years of aging in the bottle.
Bouquet: intense, persistent, hint of aromaticity in rose petals and wild berries in jam.
Taste: warm, pleasant with rare silkiness.
Castagnole Monferrato, Piedmont.
Vineyard: low Guyot training system with 7-8 buds on the fruit head.
Grape variety: Ruchè di Castagnole Monferrato. Over 25 years old vines.
Harvest: part over-ripening directly in the vineyard (about 90% of production) and part (about 10%) withering directly in the vineyard.
Yield per hectare: 75 Q.
Vinification: for the harvested part in over-ripening: in red with cold pre-maceration in the very first days of processing and short hot post-maceration at the end of fermentation. Total duration in contact with the pomace 14-16 days.
Aging: minimum 6/8 months in the bottle positioned horizontally at a temperature not exceeding 10 degrees due to the important residual sugar. Longevity 6-8 years.
