      DESCRIPTION Dolcetto is a delicate variety, which requires the right exposure and, as a true prima donna, care and attention. For these reasons the Dolcetto di Vajra is planted only in the most suitable vineyards. Great freshness and heady vinosity in this Dolcetto capable of bringing us back, with a whirlwind of fragrances and aromas, at the height of the harvest.

      VINEYARDS A single grape variety declined in four vineyards belonging to the municipalities of Barolo and Novello. The old vines of the Vergne vineyards give concentration, depth and the wisdom of those who, from the height of their plots, tell the young vines about the fulfillment of a life dedicated to beauty. The Ravera vineyard (Municipality of Novello), with its exposure facing west, at an altitude of 340 meters, sees grapes ripening capable of expressing fruity and highly drinkable wines.

      CULTIVATION Vajra has always believed in sustainable agriculture and in the natural grassing of the vineyards. No irrigation is used and thinning is decided based on the year.

      HARVEST AND VINIFICATION The Dolcetto harvest takes place in the first half of September, away from the first cold weather. The harvest is done manually to preserve the fruits intact. Fermentation lasts 7-15 days depending on the year. Bottling in the spring following the harvest, with the Easter moon.
