Saint-Romain Blanc 2022 - Nicolas Potel
An extremely elegant, fine Chardonnay with great depth. For several years now, the area has been producing great wines that have nothing to envy the more emblazoned villages of the Cote d'Or.
It is primarily by producing wines from the region's finest terroirs that Nicolas Potel, a very important Burgundian vigneron, has built an international reputation. His Villages, Premiers Crus and Grands Crus are recognized and acclaimed worldwide for their ability to offer purity of fruit and the exact reflection of their appellations and terroirs of origin. During all vinification, the cuvées are tasted two or three times a day to follow their aromatic evolution. After racking, a very soft pressing is carried out with a vertical press, then decanting before aging in barrels. In the cellar, they have chosen to avoid intervention as much as possible, decanting the wines enough for aging on fine lees for 12 to 16 months without racking and with a minimum of SO2, in order to protect mainly from carbon dioxide due to malolactic fermentations. The winery follows the biodynamic calendar trying to process the wines according to their style, both in the root and fruit days in order to best respect their uniqueness.
