      This Chardonnay has a fruity and fresh note. Traditional winemaking for a wine that is to be drunk young for an aperitif and a simple, cosy meal. The wine remains in the oak barrels on lees for eighteen months without racking. No new oak barrels, majority of large containers of 350 to 600 liter. End of ageing in vat during 6 months.

      The Domaine Antoine Olivier was born in the late 1960s with the vineyards left by Antoine Moreau-Chevalier to his younger son Hervé, father of Antoine, and extends into the areas of Santenay, Sauvigny-Les-Beaune, Pommard and Rully. In 2003 Antoine took over the reins of the company and dedicated himself to the enhancement of the ancient terroirs, historically renowned for the production of Santenay Blanc. His work is oriented towards total respect for the environment and is carried out following the common thread of pleasantness: Antoine Olivier in fact wishes that those who drink his wines should derive the same pleasure and satisfaction that he derives from producing them. Currently the crops are centered on Chardonnay and Pinot Noir. No synthetic products are used in the vineyard and we work in a sustainable way: plowing, limitation of yields per hectare, use of herbal teas and plant-based preparations, grassing in the vineyard and manual harvesting allow to obtain healthy and ripe bunches, able to best express the characteristics of the terroir. In the cellar, the grapes are selected manually, the vinification is traditional and long, the aging takes place in oak barrels and lasts about 18 months. The processes are carried out according to the denomination, each terroir and the grape variety, carefully following the lunar calendar in each phase.
