Jean Grivot's Vosne-Romanée is a pure Pinot Noir from eight different plots, including the significant Aux Ormes, located in the prestigious village of Vosne-Romanée in the Côte de Nuits, Burgundy. The winery, run by the Grivot family for generations, is renowned for its meticulous approach both in the vineyard and in the cellar. The vineyards are cultivated following non-certified organic practices, with a high planting density to encourage competition between plants and obtain high quality grapes. Vinification involves spontaneous fermentation after cold maceration for a few days, followed by ageing for about 18 months in French oak barrels, with a moderate percentage of new wood, usually around 30%.
