Vinification: short cold maceration before fermentation for 3-4 days, for a total fermentation time of about 14 days before pressing. 48-hour decantation and transfer to barrique
Refinement: in 50% new barriques
Colour: dark ruby red
Bouquet: aromas of black cherry and vanilla, spicy notes
Taste: full, with a good balance and a nice finish
In 1988 Alain and Sophie Meunier began to manage the domaine that belonged to Sophie's father: until then they knew little or nothing about vines and wine. However, they had in common the taste for well-made things and they immediately understood that wine is born in the vineyard. In order to fully respect the typicality of each terroir, the vineyard has been managed only with natural products since 1990. Some small vineyards have been worked with horses since 2003, a slow and expensive job, but which ultimately respects the soil favoring it ventilation and micro-oxygenation. Alain today represents traditional wines and, through a profound knowledge of biodynamics with the help of which he obtains "Terroir" wines, elegant and with great potential. In the wines of Nuits-Saint-Georges the smallest nuances between the different parcels are clear and marked and the vintages, despite their diversity, always have a common thread: this is the great resource of the small Domaine di Premeaux, at the gates of Nuits-Saint-Georges Saint-Georges
