Production area: Burgundy, Côte de Beaune Harvest: manual Vinification: the wines are pressed 15-20 days after maceration, the decision depends on the daily tasting of each wine to evaluate the level of extraction and the quality of the tannins Aging: the wine is transferred by gravity into the barrels. The proportion of new barrels is about one third depending on the denomination. Malolactic fermentation usually begins quite late on the estate, between March and May. As for whites, bottling is scheduled for spring for some wines (after a 20-month refinement), or in summer for others (22 months), determined by tasting.
