      Rich and fine wine with generally soft tannins. A Pinot Noir that plays on power without losing its characteristic finesse. It goes well with meats and cheeses.

      AGE OF THE VINES: 65 years GEOLOGY: Appellation Volnay 1er cru Les Santenots, the vineyards are located on the air of Appellation Meursault but are classified as "Volnay Santenots" if it is a red wine, or "Meursault Santenots" if it is a white wine Soil: oxfordian marly-calcareous with red clay, steep slope Grape variety: Pinot Noir, Guyot pruning with various annual processes (disemboweling, espalier, topping, green harvest, ...) VINIFICATION HARVEST: manual. The grapes are sorted twice (in the vineyard and on the sorting table), then de-stemmed (depending on the conditions of the harvest, a third sorting can be done with our optical sorter). Subsequently they are placed in thermoregulated stainless steel vats for about 3 weeks. During this period alcoholic fermentations take place. Light reassembly to obtain a valuable product and respect the raw material. Soft pressing. AGING: The cuvée is then placed in French oak barriques (50% new barriques), the aging period is 18 months. The wine from the barrels is transferred to a tank before bottling, in order to carry out the assembly. No clarification and no filtration
