Soil: stony clay and plaster
Harvest: manual, with selection in the vineyard
Vinification: the grapes are de-stemmed and fermentation takes place in open cement tanks which allow manual pigmentation. Only natural yeasts are used. Laurent uses a long period of cold maceration before fermentation to allow for greater extraction. Fermentation is quite long and generally lasts 15 to 20 days after the 5-day cold stop. The use of new oak for the elevation is carefully limited; up to 20% for village cru.
Aging: The wines pass from 18 months in barriques before being bottled, all without filtration. All works in the cellar that require the movement of the wine are carried out by gravity; the wines are never pumped.
