On the palate, this is a soft-textured and smooth wine that develops notes of stewed pear and sweet spices. With the finish comes a pleasant hint of bittersweet candied orange peel.

Wine with an opulent aromatic register that orientates itself when young, mainly on flint, flint. Lively and full of complexity, a very elegant wine.

Taste: intense and harmonious rather soft and perfectly supported by a vivacity without too much aggression. Slightly straw-colored with pale gold reflections. The aromas of white flowers combine with honey, reminiscent of gingerbread. In the mouth the elegance is safe, pleasant, maintaining the freshness of the grape without giving in to excessive softness.

The nose has hints of exotic fruit and white flowers. On the palate it is elegant and soft, with good acidity and a finish accentuated by pleasant mineral notes. Joseph Viola, chef and patron of Daniel & Denise, suggests drinking it as an accompaniment to cannelloni stuffed with the tenderest parts of poulet de Bresse and chopped mushrooms.

The wine is fermented with indigenous yeasts, aged for 12 months in barriques. It is a mineral and austere chardonnay that needs a few years to express itself at its best.
