The history of the Dellavalle Distillery began in 1983 in Vigliano d'Asti, in the heart of the Piedmontese winemaking tradition. After a long experience in the sector, the dream of Roberto Dellavalle, passionate winemaker and connoisseur of the world of wine and grappa, comes to life. Technique, knowledge, innovation, targeted market surveys, these are some of the main features that have allowed the Dellavalle Distillery to grow exponentially, while maintaining the prestigious label of an excellent artisan company intact. Artisan tradition that is currently finding its continuity in the generational passage of the sons Lorenzo and Federica, without forgetting the important support during the company's growth by Paola, Roberto's wife, who has always been present within the corporate core. The goal has always been to produce and market niche products based on customer needs. Within the company, through the use of a discontinuous bain-marie distillation plant, distillates are produced from a skilful selection of fresh pomace. Aging is the main technique that distinguishes this company, as, in addition to the aging of 18 months in oak barrels, a particular technique stands out aimed at aging for a total of 10 years the barbera grappa interior of barriques previously used for the refinement of Marsala, Passito di Pantelleria, Porto, Whiskey, Picolit and Malvasia delle Lipari; in this way, the product inside the barriques extracts most of the main aromas contained in the cracks in the wood, giving the grappa particular scents and scents.

Grappa obtained from mono-grape Nebbiolo grape marc and distillation in discontinuous stills. The refinement is carried out in stainless steel tanks for at least 18 months.
