Chardonnay

The use of this noble grape is truly enormous, just think that we find it as the main protagonist in Burgundy, but also as the basis for some of the most important bubbles in the world, both in Champagne and in Italy. It can be considered the king of white wines to all intents and purposes.

Fine wines, ready to drink but also capable of a good aging, which offer the possibility of a high quality white Burgundy with the facets of Southern Burgundy.

Chardonay and Sauvignon Blanc grapes subjected to cold pre-fermentation maceration and Pinot noir grapes vinified in white; pressing and decanting; alcoholic fermentation in barrique, with partial malolactic fermentation. Refining in bottle for 6 months.

The nose has hints of exotic fruit and white flowers. On the palate it is elegant and soft, with good acidity and a finish accentuated by pleasant mineral notes. Joseph Viola, chef and patron of Daniel & Denise, suggests drinking it as an accompaniment to cannelloni stuffed with the tenderest parts of poulet de Bresse and chopped mushrooms.

The main feature of this Chardonnay is certainly its great minerality, by far the most taut and mineral wine of all the whites of the Domaine Girardin. Aged for 14/15 months in barrique, it does not however lose its typical fatness and complexity.

Color: bright straw yellow with golden reflections
Bouquet: aromas of hawthorn flowers, ripe tropical fruit such as mango and pineapple, green apple and notes of flint
Taste: powerful and extremely elegant, with crisp freshness and sinuous softness, persistent minerality

Hue:Pale yellow with hints of green - bright
Nose:White acacia blossom, lemon blossom. Mandarin and pink grapefruit aromas.
Palate:Dense – rich – full-bodied. Full of energy, very complex. Very pure – a slightly salty finish – superb minerality.

The wine is fermented with indigenous yeasts, aged for 12 months in barriques. It is a mineral and austere chardonnay that needs a few years to express itself at its best.

A Chardonnay of great elegance with clayey soils that characterize the Morey area. The classic aging in wood makes it elegant and slightly buttery, with excellent aging potential.
