Mareuil-Sur-Ay | Champagne

The 20 hectares of vineyards owned by the Maison are located in Premiers and Grands Crus, in the heart of Champagne in Ay, Mareuil-sur-Ay and Avenay. More than 100 years old, precious and fragile soils, which Philipponnat preserves by working the land naturally, weeding by hand and plowing with draft horses. The Maison is committed to renewing its traditions always aiming for the best: Philipponnat is keen to preserve the existing, taking up the challenges to continuously improve the quality of the wines. Philipponnat expresses itself, among other things, using the solera method in wood, which consists in storing the reserve wines in oak barrels and reintroducing them in the assembly of non-vintage wines in the proportion of a quarter to a third, to then use this same blending as a reserve wine of subsequent blending. This has always been the tradition of the Maison. In this way, a progressive dilution allows to keep in each bottle the trace of the thousandths assembled from the beginning. A savoir-faire handed down over the centuries by the cellarmen chiefs of Philipponnat.

Cuvée head of six great wines from the Côte des Blancs: Avize, Cramant, Oger, Chouilly, Vertus, Grauves, with a touch of Trépail, made entirely from Chardonnay. Gold color with light green reflections. Creamy mousse, very fine and excellent hold. Nose: acacia and hawthorn. Palate: nutty and citrus flavor, with a slight sensation of brioche.
